It was a might chilly last night. 1.8 degrees at our house. Yes there is a decimal point in there for all you snow birds. I guess that is good weather for making ice.

Ok, on tho the big deal today. It's FISH FRYYYYYYYYYYYYYYYYYYYYYYYYYYYY FRIDAY!!!!!
This week Mark Weber of Boulder Junction and Racine, has sent in his favorite recipe for a fish fry. Mark calls it Butter Fish. Why? Because he say's it's catchy and he uses buttermilk.
Ok, so on we go with Butter Fish...
1 lb. fish fillets
3/4 c. cultured low fat buttermilk
1 tbsp. Dijon-style mustard
1/4 tsp. pepper
1 c. Italian seasoned breadcrumbs
Rinse fish fillets and pat dry.
In shallow pan, combine buttermilk, mustard and pepper.
Place bread crumbs on sheet of waxed paper.
Dip fish fillets in buttermilk mixture and coat with breadcrumbs.
Lightly grease large skillet with spray vegetable coating.
Cook fillets over medium-high heat for 4 to 5 minutes on each side, or until fish flakes easily with a fork.
Eat it up.
Mark, I think I'm going to like Butter Fish. Your fish fry is in the mail.
