Well, it feels like fall and football is under way so Ihate to say it, but yes, we are on the downturn.
However the good news is that it is FISH FRY FRIDAY!
Today we dine on a recipe from Helen Parish of Eagle River. Helen said she got this recipe from a friend years ago and it's been the best recipe Ever!
Today we dine on, Cracker Fish.
4 nice walleye fillets
3/4 cup Ritz crackers
3/4 cup parmigiana cheese
1 tablespoon Old Bay seasoning
Flour, for coating
2 large eggs, beaten
Splash heavy cream
Oil for frying
Salt and pepper Makin' It:
Using a food processor, grind the Ritz crackers, parmigiana cheese, Old Bay.
Transfer to a shallow bowl. Place the flour in another shallow bowl. In a third shallow bowl, beat the eggs and cream.
Fill a large skillet with oil. About 1/4 inch and heat over medium-high heat.
Season the fish fillets with salt and pepper. Coat the fish with the flour, shaking off any excess; coat with the egg mixture, then with the cracker crumbs.
2 fillets at a time, fry the fish in the skillet, turning once, until deep golden, about 5 minutes.
