As I look down at my watch after answering 20 or so e-mails, I see that half the day is gone. Only a few moments until lunch, and what better day to have it than on.....FISH FRYYYYYYYYYYYYYYYYYYYYYY FRIDAY!!!

This week we enjoy the baked fish delight of Meggan Kimble of Eagle River. Meggan sent us her favorite recipe for

Easy Baked Fish.

The Parts:
3 tablespoons honey
3 tablespoons Dijon mustard
1 teaspoon lemon juice
4 (6 ounce) salmon steaks
1/2 teaspoon pepper

Fixin' Parts:
Preheat oven to 325 degrees F.

In a small bowl, mix honey, mustard, and lemon juice. Spread the mixture over the salmon steaks. Season with pepper. Arrange in a medium baking dish.

Bake 20 minutes in the preheated oven, or until fish easily flakes with a fork.

NICE! This is a gem. Thanks Meggan, your fish fry is on the way.
