Wolf's Blog

This week it could not come soon enough.

Today it is a recipe from Carol Beaman from Presq Isle that we explore. This recipe has me very excited to heat up the oven and get cookin'. Today we dine on...

Aunt Carol's Spinach and Fish Bake

The Parts:
1 pound cod fillets
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup sharp Cheddar cheese
1/3 cup dry bread crumbs
1 egg, beaten
Salt and pepper to taste

The Fixin Up Part:
Preheat oven to 325 degrees.

In a bowl, mix the spinach, 1/2 cup Cheddar cheese, about 5 tablespoons dry bread crumbs, and the egg.

Spread the mixture into the bottom of a small baking dish. Arrange the cod fillets on top of the spinach mixture, and season with salt and pepper. Top with the remaining Cheddar cheese and bread crumbs.

Cover, and bake 20 minutes in the preheated oven, or until fish flakes easily with a fork.

This one sounds GOOOOOOOOOOOOD Carol. Y
