So Friday I could not be here because of remotes and other station craziness, but I did get a very nice fish fry recipe from Scott Fleishman (9) of Mercer / Wauwatosa, that listens to WRJO on vacation. I promised Scott I would post his recipe today, and get that free fish fry to him.
He is up north with his grandparents till the end of this week, staying at the family cabin on Spider Lake.
Scott said that this recipe is used by his grandma to cook what grandpa and him catch.
The Parts: 2 pounds fish fillets, cut in half lengthwise
2 eggs, lightly beaten
1-1/2 cups crushed saltines (about 45 crackers)
Makin' It: Place eggs and cracker crumbs in separate shallow bowls. Dip fillets into eggs, then coat with crumbs. Let stand for 5 minutes.
In an electric skillet or deep-fat fryer, heat oil to 375°. Fry fillets, a few at a time, for 2 minutes on each side or until fish is golden brown and flakes easily with a fork.
Drain on paper towels.
