Welcome to FISH FRYYYYYYYYYYYYYYYYYYYYYYYYYYYYY FRIDAY!! I hope you week was well, and you have a big weekend planned.

This week 's recipe comes from Jackie Meier, of Minocqua. Jackie said that this is her families favorite of all time. Today we dine on Meier Mania Fish

The Parts: 
1 lb of northern or walleye
1/4 cup fresh basil, finely minced
1/4 cup chicken broth
2 tablespoons parmesan cheese - grated, fresh is better
4 teaspoons olive oil
1 ½ teaspoon salt, divided
2 garlic cloves, minced
1/4 teaspoon black pepper, freshly ground
Cooking spray - I use Butter Flavored

Makin' It:
Combine basil, broth, cheese, oil, 1/2 tsp salt, and garlic in a small bowl.

Sprinkle fish with 1/2 tsp salt and pepper.

Coat a large nonstick pan with cooking spray and heat over medium-high heat.

Pan fry fish for 5 minutes on each side or until it flakes easily with a fork.

Spoon basil sauce over fish to serve.

Wow, sounds very good Jackie. You fish is on the way.
