Well because of the remote tomorrow, today we celebrate FISH FRYYYYYYYYYYYYYYYYYYYYYY FRIDAY. This recipe is from Scott McClaren of Elcho. Scott said this is just a great fish recipe. Today we dine on Scott's fish.


The Parts:
4 nice fillets
2 egg whites
2 tablespoons cool water
3/4 cup yellow cornmeal
3/4 cup all-purpose flour
Black pepper, or to taste
Salt to taste
1 1/2 cups vegetable oil, or more as needed


Makin' It:
Stir egg whites and water together with a fork in a wide, shallow bowl. Mix cornmeal, flour, and pepper together with a fork on a plate.
 
Heat oil to 350 degrees.

Dip each fillet into the egg white mixture and press into the cornmeal mixture to coat completely. Gently shake extra cornmeal away. Place fish onto a plate while preparing the rest of the fillets; do not stack.

Fry until golden brown on each side.

Season with salt.

Very nice Scott. Sound like a winner. Your fish is on the way.
