Not a bad day at all. I did rather enjoy the snow on my ride home from work yesterday. All the lakes are open now and waiting to warm up a bit to fire up that fish bite.

Well today we have a fish recipe from Allen Wrightburg of Minnetonka MN. Allen has a family cabin on lake Tomahawk and said that this is the recipe they use while in the Northwoods. Today we dine on Wrightburg Walleye.

The Parts:
4 large walleye fillets
1/3 cup all-purpose flour
2 teaspoons seasoned salt
2 eggs
1/2 cup dark beer
1 1/2 cups crispy bread crumbs
Oil for frying

Makin' It: 
In shallow dish, mix flour and seasoned salt.
In medium bowl, beat eggs and beer with whisk.
Place bread crumbs in large resealable food-storage plastic bag.
Coat both sides of fish fillets with flour mixture, then dip in beer mixture, letting excess drip back into bowl.
Place 1 or 2 pieces of fish at a time in plastic bag with bread crumbs; seal bag and shake to coat completely.
Fry fish in batches in 350 degree oil about 4 minutes, turning once, until golden brown.
Drain on paper towels. Serve hot.
