When I woke up this morning and the temperature was over 38 degrees, I panicked. I thought, that it wasn't possible that we MAY be out of the winterness that is northern Wisconsin.
But I was also excited because it is FISH FRYYYYYYYYYYYYYYYYYYYYYYYYYYYY FRIDAY!!!
Right now it looks like there will be ice on the lakes for next weeks opener. Rivers are good but not the inland lakes. But Bob Kimble has a recipe to share once you start to reellin' in the taste treats. Today we dine on Kimble's Wonderful Walleye.
1lb walleye fillets
3/4 c. milk
2 tsp. salt
1 tsp. pepper
1 cup flour
1 cup cracker crumbs
1/2 cup corn flake crumbs
Put milk, egg, salt and pepper in blender, turn on low speed to combine. Slowly add flour and blend until batter is smooth. Pour batter into a bowl.
Combine cracker and corn flake crumbs in a separate bowl.
Rinse walleye in cold water, drain, pat dry with paper towels.
Dip fillets in batter, coat with crumbs.
Deep fry at 350 degrees until fillets are floating and golden brown.
Place on paper towels to drain.
