Well another month gone by in 2011.

But I guess if your going to start a month then why not do it on FISH FRYYYYYYYYYYYYYYYYYYYYYYYYYYYYYY FRIDAY!

To the recipe cards!

This week we have a recipe sent in from Richard Vollmer.
Today we dine on...

Double Dipped Pan Fish:

Richards say's the secret to the recipe is the second dip.

The Parts:
1-1/2 pounds bluegill or crappie fillets
1/2 cup vegetable oil, divided
1 cup seasoned bread crumbs
1 cup grated Fresh Parmeson cheese
1/2 tsp. salt
1/2 tsp. lemon-pepper seasoning
1/4 tsp. pepper
6 eggs

Combining The Parts:

In a shallow bowl, combine the first 5 ingred's.

In another bowl, whisk the eggs, dip fillets in eggs, then coat with crumb mixture.

Dip again in eggs and crumb mixture.
In a large skillet over medium-high heat, cook fillets in batches in 2 Tablespoons oil for 2-3 min. on each side or until fish flakes easily with a fork, addeing oil as needed.

Wonderful.

Thanks Richard, this is a dandy.
