Well tomorrow I am not going to be in. Now even though I am Catholic, it has nothing to do with Good Friday, I am sure my mother wishes it did, but it does not. I have a company meeting, and I will be honest, it will involve cheese soup in Ashland. Yes mother, I will eat fish.

But because I will be gone I am going to post my Fish Fry recipe today. So happy early FISH FRYYYYYYYYYYYYYY Friday.

Today's recipe comes from Kevin Hart of Three Lakes. Kevin calls his recipe,  "Walleye the way I Like it". So here we go.


The Parts:
4 to 6 walleye fillets
1 egg
1 teaspoon honey
1 cup coarsely crushed saltines
1/3 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
Frying oil


Makin' It: 
In a bowl, beat the egg with the honey.
 
In another bowl, combine the cracker crumbs, flour, salt and pepper.
 
Dip fillets into egg mixture, then coat with cracker mixture.
 
In a large skillet, heat oil and fry coated fish over medium-high heat for 3-4 minutes on each side or until fish flakes easily with a fork.
