I guess the mornings scaping the truck windows is going to last a while. 25 last night at the Wolf Ranch.
It is nice however knowing that a nice warm fish sandwich is in the works for lunch because, it's FISH FRYYYYYYYYYYY FRIDAY!
Today I have a recipe that is simple but so darn delicious.
This Friday we dine on...
"Ritz"ie Pan Fried Fish The Parts: 2 pounds of your favorite fillets
1 1/2 cups of Ritz crackers, crushed but not fine
1/2 tsp galic powder
1 tsp lemon pepper
2 large eggs
Oil for frying
Fixin' It: Crack eggs into a shallow bowl and beat.
On plate mix crackers, galic powder and lemon pepper.
Dip each fillet in egg and then coat on both side with the crackers.
Place coated fillets on plate and let sit for 5 minutes.
Heat your oil in a shallow pan. You want just enough oil to cook just one side at a time.
Fry till golden brown and fish flakes.
This is one of those recipes that you will want to eat the fish right as it comes out of the pan. just don't burn your mouth.
