Happy FISH FRYYYYYYYYYYYYYYYY FRIDAY!!!
I am excited as always on this F.F.F. I am looking forward to a big plate of fish tonight. I'm thinking baked or as we grew up saying; Poor Man's Lobster!
In honor of the cod fish, we have a recipe this week from Carolynn Beeman of Three Lakes. Carolynn said her husband Mark and her love this baked recipe. She also said she uses it with all kinds of fish.
Today we dine on Carolynn's Baked Fish.
2 pounds skinless cod fillets
1 sleeve of Ritz crackers (about 34 crackers)
5 Tbsp unsalted butter
Lemon and parsley for garnish (optional)
Preheat the oven to 350°F. Grease a small baking pan or casserole pan with butter or a little oil. Rinse off the fish fillets with cold water, pat dry. Use long nose pliers to remove any pin bones from the fillets. If you want, cut the fillets into large serving pieces. Place the fillets at the bottom of the pan, sprinkle with salt.
Melt the butter. Crush the Ritz crackers over a bowl; they should look like coarse breadcrumbs. Mix the melted butter with the breadcrumbs. Pack the crumb mixture over the top and sides of the fish fillets.
Place in the oven and bake for 20 minutes or until the fish flakes easily. Thin fillets may take less time, very thick fillets may take longer. Serve the fish with lemon and parsley.
Can't wait to try this one.
Now don't forget, if you have a recipe that everyone should try get it to me. All recipes can be sent by e-mails, letter, or dropped off her at the studios in Eagle River. If I use you recipe on this blog you will receive a FREE fish fry to a local restaurant.
