Well finally a warm up. It's amazing, actually above zero today. Maybe into the high 20's. In this weather it's time to break out the flip flops and Hawaiian shirts.
Welcome to the first FISH FRYYYYYYYYYYYYYYYYYYYYYYYYYYYYYY FRIDAY of 2014, and our first fish fry.
Today we dine on a recipe that comes from Dennis Peiper of Milwaukee. Dennis has a summer home in Rhinelander and loves this recipe for his summer catches. Today we dine on Peiper Pan Fish.
The Parts: 6 fish fillets
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon water
1/2 cup flour
1/2 cup cornmeal
1/2 Parmesan cheese
Vegetable oil or shortening
Makin' It: Sprinkle both sides of fish with salt and pepper.
Beat egg and water in shallow bowl until well mixed. Sprinkle flour and corn meal on waxed paper or a plate. Dip both sides of fish into egg, then coat completely with flour and corn meal.
Heat oil in skillet over medium heat about 2 minutes.
Fry fish in oil 6 to 10 minutes, turning once, until fish flakes easily with fork and is brown on both sides.
Drain on paper towels.
